Keto Tuna Salad Cups

Tuna salad meets BLT in this keto-friendly mashup. Hang on to that oil in the tuna can for a flavor bonus.

Ingredients

  1. 4 large eggs
  2. 4 strips bacon
  3. 1/3 cup olive or avocado oil mayonnaise
  4. 2 tablespoons sour cream
  5. 1/4 teaspoon lemon zest plus 1 tablespoon lemon juice
  6. 1 stalk celery, thinly sliced
  7. Two 5-ounce cans tuna packed in olive oil, 2 tablespoons of the oil reserved and the rest drained
  8. 2 scallions, sliced
  9. Kosher salt and freshly ground black pepper
  10. 1 medium tomato, halved and cut into 8 slices
  11. 16 leaves Bibb lettuce

Instructions

  1. Cover the eggs with about an inch of water in a medium pot. Bring to a boil, remove from the heat, cover and let stand for 8 minutes. Drain and submerge in ice water. When cool enough to handle, peel the eggs and chop.
  2. Meanwhile, cook the bacon in a large nonstick skillet over medium heat until golden and crisp, about 4 minutes per side. Remove to a paper towel-lined plate. Crumble into bite-size pieces. 
  3. Whisk together the mayonnaise, sour cream, lemon zest and juice, celery, reserved tuna oil, three-quarters of the scallions, 1/4 teaspoon salt and several grinds of pepper in a medium bowl. Add the tuna and three-quarters of the bacon and egg and gently fold together (do not overmix). Season with additional salt and pepper if needed. 
  4. Sprinkle the tomato slices with salt and pepper. 
  5. Double-up the lettuce leaves and fill each with some tuna salad. Tuck in a tomato slice. Sprinkle with reserved scallions, bacon and egg.

Perfect for entertaining the summer time! Delicious with the tuna, egg, lemon, mayo, sour cream mixture. Substituted with sweet onion. Added diced English cucumbers, sliced baby carrots, sweet relish, roasted bell pepper slices I layered on a romaine leaf, then topped with the mixture, avocado slice and a Roma tomato slice for the topping (3 pieces of bacon crumbles, two eggs, one can of albacore in water, evo mayo).

Absolutely delicious and visually appealing !! Someone started kept diet so I made and served as appetizer then we both loved so much so we had a second and ended up with eating less entree. I do not keep sour cream in fridge so did not buy for 2 tablespoons but added more lemon juice. Whether you are on diet or not this is easy & super tasty salad to make.

I was a little nervous, never having made more than a mayo-tuna-onion combination before. This. Is. Good. I didn’t have scallions but next time I will make sure that I do – I substituted dried chives which were good too. I use tuna packed in water and I bet the oil addition really perks it up. Even with my changes I’ll make this one again!

AMAZING!!! What complete surprise. This needs very little tweaking, we added one avocado (chopped), and think a bit of granulated garlic and small amount of dill will get our drool functions going! As it is per recipe, it is a keeper! Well done!

This was SO good! I made this on a hot day and everyone, even my non Keto kidos, thought this was amazing. It’s also very customizable. We added shredded cheddar just because my family likes cheese. I had a request for chopped pickle too. I also think I will try making this with crab. My picky husband asked me to make this again!
