Jerky Tomato Sauce

Ingredients

  1. 3 to 4 ounces beef jerky
  2. 1 cup boiling water
  3. 1 tablespoon vegetable oil
  4. 1/2 cup chopped onion
  5. 1/2 cup chopped green bell pepper
  6. Pinch kosher salt
  7. 2 cloves garlic, minced
  8. 1 (14.5-ounce) can chopped tomatoes
  9. 1 teaspoon dried parsley
  10. 1/4 cup heavy cream

Instructions

  1. Using kitchen shears, cut the jerky into small bite-size pieces. Place in the boiling water and set aside. 
  2. Place the vegetable oil, onion, and bell pepper, along with a pinch of kosher salt, in a large, 12-inch saute pan over medium heat. Sweat for 4 to 5 minutes or until the onions are translucent. Add the garlic and continue to cook for 2 to 3 minutes. Add the jerky and its liquid along with the tomatoes, parsley, and cream, and continue to cook for 8 to 10 minutes or until the sauce thickens slightly. Serve over toast, biscuits, rice, or pasta.

This is great.  We’ve made this camping and at home.  It’s simple and much more than the sum of it’s parts.  I usually use half and half just to save a bit of calories.  I’m making it again next week.

I made this for tonight’s supper because I have a lot of Good Eats jerky and some leftover rice. This was simple to make and tasty to eat. It had the aroma of a dish I ordered at Olive Garden in the past. Here’s the alterations I plan to try in the future: 1. use whole milk instead of heavy cream to cut down the fat, might add a little cornstarch to assist with thickening, 2. boil the jerky for a while to see if I can make it even more tender. Tonight I just brought a cup of water to boil in the microwave and then added the jerky to it and let it sit for about 15 minutes while I was working the onions, green pepper, etc. Twice I ran the microwave for an additional 15 seconds just to keep it hot. Next time I’ll boil the jerky on the stove to see how much moisture it can take in and how tender it can get. All in all, this was a very tasty recipe. Even my wife who is not really an Alton fan said we’ve got a good one here. Oh, this only made enough to feed two of us so plan accordingly.

Though most people might think jerky in tomato sauce would be weird to say the least, it is actually quite tasty and not at all as chewy as you may be thinking.
