Hungarian Noodles with Sausage

Ingredients

  1. Kosher salt
  2. 8 ounces egg noodles
  3. 2 tablespoons extra-virgin olive oil
  4. 3 sweet Italian turkey sausages (about 9 ounces), casings removed
  5. 1 onion, chopped
  6. 1 clove garlic, minced
  7. 3/4 cup chopped roasted red peppers
  8. 1 tablespoon paprika
  9. 1 cup low-sodium chicken broth
  10. 1/2 small head Savoy or green cabbage, sliced 1 inch thick
  11. 1/3 cup sour cream
  12. 2 tablespoons chopped fresh dill or parsley
  13. Freshly ground pepper

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  2. Meanwhile, heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until crumbled and lightly browned, about 3 minutes. Add the onion; cook, stirring occasionally, until softened, about 3 minutes. Add the garlic, red peppers and paprika and cook, stirring, 1 minute. Add the chicken broth, cabbage and 1/2 teaspoon salt. Bring to a gentle simmer and cook until the cabbage is tender, about 4 minutes.
  3. Add the noodles and sour cream to the sausage mixture. Cook, stirring, until well coated, about 30 seconds (do not boil). Add the reserved cooking water as needed to loosen. Stir in the dill and season with salt and pepper.

This was absolutely delicious!! I used both sweet and smoked paprika. Was lucky enough to find Hungarian ground pork sausage in the grocery store. Will definitely make this again (and again). Thank you for a great recipe— wish I knew which chef came up with this recipe!

A new favourite recipe.  Easy and tasty!  I can’t always find chicken/turkey sausages locally so sometimes use regular but it’s still a pretty healthy recipe.

Second time making this and it is delicious!! My family (husband and 3 kids) loved it. They ate it up like it was their job! I used the Butterball lean hot Italian turkey sausages (in my grocery it’s with the poultry and ground turkey not in the sausage section). Sliced lightly down the side and the casing peeled right off. Crumbled up the sausage as it cooked. Also used green cabbage, very thinly sliced so it cooks faster. The recipe as written does not make that much. First time I doubled it and it fed my family of 5 perfectly. This time I tripled it and we have leftovers for lunch. This will be in regular rotation. The fresh dill is an absolute MUST. So so yummy!

This was a good meal to make after work – no excess prepping of ingredients, which is always appreciated at the end of a work day.  It wasn’t a spectacular dish – just average.  … like the previous reviewer, I couldn’t find turkey sausage, so ended up using maple chicken sausage.  It didn’t crumble, so I’ve got chicken sausage slices instead.

Saw this recipe on November issue of Food Network Magazine so I made it for dinner today. Great combination of all the ingredients. Paprika gave it so much flavor. I love it! I could not find sweet Italian turkey sausage so I used sun-dried tomato chicken sausage instead.  My husband rated this dish 5 stars! I will certainly make this dish again in the near future.
