Ingredients
- 1/2 cup almond butter
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1/3 cup rolled oats
- 1/4 cup mini dark chocolate chips
- 1/4 cup ground flaxseed
Instructions
- Mix together the almond butter, honey and vanilla in a medium bowl. Add in the oats, chocolate chips and flaxseed and mix well.
- Roll the mixture into 1-inch balls and place on wax or parchment paper. Stick in the refrigerator for 30 minutes.

We are a fan of the traditional nobake cookies. I found this recipe and thought it looked like a good substitute. I used sunbutter and substitute flaxseed for more nuts or oats from time to time. My kids and husband even liked them!
Very easy and delicious. My 5 year old loved them.
I love the idea of a healthy version of a cookie you don’t need to bake on a hot day, but these…tasted like healthy cookies. Perhaps the TINIEST sprinkle of sugar or a drizzle of melted chocolate would elevate these. My kid eats pretty healthy and she wasn’t a fan of these either.
