Ingredients

  1. Deselect All
  2. 1 pound refrigerated pizza dough, at room temperature
  3. 2 tablespoons extra-virgin olive oil
  4. 1/2 pineapple, peeled, cored and cut into rings
  5. 1 bunch scallions, green parts finely chopped
  6. 1/4 cup barbecue sauce
  7. 1 tomato, diced
  8. 1 cup shredded pepper jack cheese (about 4 ounces)
  9. 1/2 cup shredded muenster cheese (about 2 ounces)
  10. 1/4 pound deli-sliced ham, cut into large pieces

Instructions

  1. Put an inverted baking sheet or pizza stone in the oven and preheat to 475 degrees F. Line another inverted baking sheet with parchment paper. Brush the dough with the olive oil and center it on the parchment. Cover with another piece of parchment; set aside.
  2. Heat a grill pan over medium-high heat. Grill the pineapple rings until marked, about 4 minutes per side. Transfer to a plate. Grill the scallion whites, turning, until charred, about 4 minutes. Transfer to the plate with the pineapple.
  3. Combine the barbecue sauce and tomato in a small bowl. Stretch the pizza dough to 10 by 14 inches on the parchment; spread the barbecue sauce mixture on top. Sprinkle with the pepper jack and muenster cheese and top with the grilled pineapple, ham and scallion whites and greens.
  4. Slide the pizza (on the parchment) onto the hot baking sheet or pizza stone. Bake until the cheese is bubbling and the crust is golden, about 15 minutes. Transfer the pizza to a cutting board and slice.

This is so delicious and easy to make!  Adding it to our summertime favorites list!  We loved it so much we made it 2 days in a row except used some cutup leftover BBQ chicken instead of the ham.  Sooooo good!

Make it even better, add charred Hatch green chilis to add heat to the sweet (or on just half if your spouse is spicy adverse)

We used pre-made dough by pillsbury and followed the instructions on the packaging. This was fantastic. Between my daughter, husband and I, we ate almost the entire pizza. The flavors worked together perfectly. We will definitely be making this one again.

Excellent flavor all around and fairly quick and easy. I especially loved the technique of placing the dough on parchment paper and stretching it. Such an easy way to transfer the dough to the hot pan, which I’ve always struggled with. I’ll use this technique all the time now in my homemade pizza making. Thanks!
