Gluten-Free Coconut Pineapple Strawberry Smoothies

Smoothies can be deceptively fattening and loaded with sugar, despite being touted as a healthy snack. This version skips ice cream and yogurt and uses frozen coconut milk to provide a rich, creamy texture. Flax seeds are added to boost the natural goodness of strawberries and pineapples.

Ingredients

  1. 1 cup coconut milk
  2. 1 1/2 cups fresh or frozen strawberries
  3. 1 cup fresh or canned pineapple chunks
  4. 1/4 cup unsweetened pineapple juice
  5. 2 tablespoons flax seeds

Instructions

  1. Pour the coconut milk into a clean ice cube tray (it will not fill the entire tray) and freeze at least 4 hours or up to overnight. 
  2. Add the coconut milk cubes, strawberries, pineapples, pineapple juice and flax seeds to a blender and puree until smooth. Pour into glasses and serve.
