Ingredients
- 1 (9 3/4 to 10-ounce) can 98-percent fat-free chunk white chicken breast in water, drained and flaked
- 1/2 cup salsa, plus more, as dip, optional
- 1/3 cup shredded fat-free Cheddar cheese
- 1/4 teaspoon dry taco seasoning mix
- 8 (6-inch) yellow corn tortillas
- Fat-free sour cream, as dip, optional
Instructions
- Preheat the oven to 375 degrees F.
- In a medium bowl, combine the chicken and salsa, and mix thoroughly. Cover and refrigerate for 15 minutes.
- Remove chicken mixture from the refrigerator, and drain any excess liquid. Add cheese and taco seasoning, and mix to combine. This is your filling. Set aside.
- Prepare a baking sheet by spraying it with nonstick spray. Set aside.
- Dampen 2 paper towels, and place tortillas between them. Microwave for about 1 minute, until tortillas are warm and pliable.
- Place one tortilla flat on a clean dry surface (keep the rest between the paper towels), and spoon about 2 heaping tablespoons filling onto the tortilla. Spread it evenly across the entire surface, and roll the tortilla up tightly, so that you have a cigar-shaped tube. Secure with toothpicks, if needed, and place seam-side down on the baking sheet. Repeat with remaining tortillas and filling.
- Bake in the oven until crispy, 14 to 16 minutes.
- Allow to cool for 5 minutes. Serve with sour cream and additional salsa for dipping, if using. Enjoy!

I used cooked chicken rather the using canned. It came out delicious! I’ll definitely make this again!
I like the concept but for whatever reason my tortillas would not become crispy. I finally gave up after they had been baking for almost double the time and the edges started to burn. The center and bottom were still soft.

what is so explosive about it….surely not the spices unless you are into salt… Back to the drawingboard guys… you need to add something to this to make it other than blandish with a boxy flavor.
Mine were literally exploding! They tasted good but they burst open in the oven. I used white corn tortillas. Not sure what went wrong…anyone have any ideas? I’ve made them before (different recipe and I think I used yellow corn tortillas as this recipe says) and I don’t remember them bursting open like that before.I also don’t remember spreading the filling over the tortilla before rolling it up.

This is my only taquitos recipe from now on. Great way to use up leftover chicken when you had roasted chicken the day before.
