Instructions
- Heat 2 teaspoons olive oil in a Dutch oven over medium heat. Add 1 diced onion and cook until soft, 5 minutes. Add 1 pound chopped collard greens, a handful at a time, adding more as it cooks down. Add 1 cup chicken broth and season with salt and pepper. Cover and simmer until tender, about 45 minutes.

To turn this into a delicious main dish, simply simmer two smoked ham hocks until almost done. Then add the greens and simmer for a further 45 minutes or until they are as tender as desired. Serve with cornbread sipped into the ‘liquor’ at the bottom of the bowl. Simply heavenly! But do not use a sweetened cornbread. Emeril’s recipe is superb, although you don’t need the bacon fat.
This is so simple it’s hardly a recipe but nonetheless, it turned out great. Made an easy quick and healthy side dish.
