Chocolate Chickpea Hazelnut Spread

Ingredients

  1. 1 cup hazelnuts
  2. 1 cup canned chickpeas, drained and rinsed
  3. 1/2 cup coconut sugar
  4. 1/3 cup cocoa powder
  5. 1/3 cup olive oil or coconut oil
  6. 1 teaspoon vanilla extract

Instructions

  1. In a food processor, pulse the hazelnuts until they form a fine meal. Add the chickpeas and process until combined. Add the coconut sugar, cocoa powder, olive oil, vanilla and 1/4 cup water and process until smooth.

Mine didn’t turn out as dark as the pic above, so next time I’m adding twice the cocoa powder! Also used another rater’s tip and used half n half instead of the coconut oil. I keep it in the frig and eat a teaspoon with a dollop of whip cream for an afternoon “I gotta have something chocolate!!” relief!!

Being hazelnut fiends, we were looking for a good homemade alternative to the store bought brands. All in all, Miss Lee hit this one out of the park! HOWEVER – there are some things you will need to know – a strong high speed food processor is a must! We own a BlendTec wildside blender. And while it did an admirable job, this recipe is truly for a proper food processor. The coconut oil (along with the coconut sugar) almost mutes the hazelnut flavor. We will be trying this with milk or half and half next time. Katie is spot on with the coconut sugar as it perfectly compliments the hazelnut-cocoa flavor. IF YOU OWN A BLENDTEC or like mixer, pulse the hazelnuts – remove from mixer – then blend the chickpeas returning the hazelnuts afterwards. Add liquids before adding cocoa and sugar.
