Chocolate-Chia Pudding

Chia seeds give this super-chocolaty pudding a satisfyingly rich texture.

Ingredients

  1. 2 1/4 cups 2-percent milk
  2. 4 ounces semisweet chocolate, finely chopped
  3. 1/4 cup unsweetened cocoa powder
  4. 3 tablespoons light agave nectar
  5. Kosher salt
  6. 1/4 cup chia seeds
  7. 1 teaspoon pure vanilla extract

Instructions

  1. Cook the milk, chocolate, cocoa powder, agave and a pinch of salt in a medium saucepan over medium-low heat, whisking constantly, until the chocolate melts and the cocoa dissolves, 6 to 8 minutes. Transfer to a medium bowl. Stir in the chia seeds and vanilla. Let cool, stirring every 10 minutes, to room temperature, about 1 hour. Refrigerate, covered, until chilled, 8 hours.

Agave? Higher on the glycemic index than HFCS…. Recipe’s ok but replace sweetener.

Amazing!!  So simple and easy to make and it is delicious! This is my husband’s and my favorite dessert. I was diagnosed with many food intolerances and IBS 2 1/2 years ago and feel like all my favorite foods were taken away from me. Thanks to this website and this delicious dessert, I feel like I’ve gotten a lot of quality of life back. How funny that this really simple dessert can bring so much happiness. Very simple to make…and actually quite tasty! Used the granola to garnish as I like some crunch in my puddings. Nice change up for breakfast!
