Ingredients

  1. 2 pounds chicken tenders
  2. 1 cup yogurt
  3. 1 tablespoon curry powder
  4. 4 dashes hot sauce, or to taste
  5. 2 cloves garlic, minced
  6. 1 shallot, minced
  7. 1-inch piece fresh ginger, minced
  8. Kosher salt
  9. 1 tablespoon vegetable oil
  10. 1 tablespoon curry powder

  14. 1/2 cup smooth peanut butter
  15. 1/2 cup coconut milk
  16. 1/4 cup soy sauce
  17. 2 tablespoons brown sugar
  18. 1/2 teaspoon hot chili oil
  19. Juice of 2 limes
  20. Kosher salt
  21. 1/2 cup hot water
  22. 1/2 cup chopped fresh cilantro, for garnish

Instructions

  1. For the chicken: Cut the chicken tenders into 2-inch pieces and put in a large container. Whisk together the yogurt, curry powder, hot sauce, garlic, shallot, ginger and some salt in a small bowl. Pour over the chicken, cover and marinate, refrigerated, for 1 to 2 hours.
  2. Meanwhile, soak the wooden skewers in water.
  3. When ready to cook the chicken, heat a grill pan over medium heat.
  4. Remove the chicken from the marinade and thread 2 pieces onto each skewer. Grill the chicken until cooked through with nice grill marks, 3 to 4 minutes per side. Let cool. Cover and refrigerate.
  5. For the peanut sauce: In a small pot, heat the oil. Cook the curry powder, garlic, shallot and ginger until the aromatics are soft. Scrape this into a blender and add the peanut butter, coconut milk, soy sauce, brown sugar, hot chili oil, lime juice and a pinch of salt. Blend, adding the hot water a little at a time to thin it and make it smooth. Transfer to a bowl, cover and refrigerate.
  6. To serve, put a bowl or ramekin of the peanut sauce in the center of a round serving plate. Arrange the skewers in a circular pattern around the bowl with the meat facing toward the center. Sprinkle with the cilantro.

I like this one, my first time with this particular recipe. Maybe a touch more lime juice and heat, but that’s up to everybody’s personal taste…

I made this as a bowl, added broccoli, onions, snap peas and carrots, sautéed them first, hit them with the sauce in the last minute or two, covered them up to steam while I then sautéed the chicken, recombined and served over rice. Didn’t even bother with marinating the chicken still came out Tasty! Next time I’ll definitely take the extra step, didn’t have the time tonight

For whatever it’s worth, our kid scarfed up the first plate and polished off the batch! And he’s a picky one…

I’m shocked at the low ratings saying this has no flavor…this recipe does not disappoint with aromatics! Marinating the chicken in the yogurt and aromatics makes it tender and extra flavorful.

My husband and I usually LOVE Ree’s recipes! She has never disappointed until we made this. Maybe it just wasn’t our preferred flavor profile or what but it was absolutely terrible. So bad in fact we tossed it and ordered dinner in. Zero stars, this was just not good at all.

I’ve made this several times now, and the response from the crowd is always “Wow!”. Sometimes I add extra brown sugar to the peanut sauce as I like a little extra sweetness, but it’s excellent just as it is as well. Also, I served the chicken hot off the grill last night and it was awesome!
