Burgers with Green Tomato Salsa

Ingredients

  1. 2 green tomatoes, diced
  2. Juice of 2 limes
  3. 1 tablespoon sugar
  4. Kosher salt
  5. 1/2 cup chopped fresh cilantro
  6. 1/2 small red onion, diced
  7. 1 red jalapeno pepper, seeded and finely chopped
  8. 4 ears of corn, husked and halved
  9. 2 teaspoons vegetable oil, plus more for the grill
  10. Freshly ground pepper
  11. 1 1/2 pounds lean ground beef
  12. 4 sesame hamburger buns
  13. 1/2 cup prepared guacamole

Instructions

  1. Preheat a grill to medium high. Make the salsa: Combine the tomatoes, lime juice, sugar and 1 teaspoon salt in a small microwave-safe bowl. Microwave 2 minutes, then stir in the cilantro, red onion and jalapeno; set aside.
  2. Toss the corn with the vegetable oil in a large bowl; season with salt and pepper. Form the beef into four 1-inch-thick patties; season with salt and pepper. Lightly brush the grill grates with vegetable oil. Grill the corn, turning occasionally, until marked and tender, about8 minutes. Meanwhile, grill the burgers about 4 minutes per side for medium rare. Toast the buns on the grill.
  3. Sandwich the burgers on the buns with the guacamole and salsa. Serve with the corn.

My issue is with the sugar. To me the recipe would’ve been better without sugar, but that’s me. Thankyou!

This was a surprise for us. By that I mean that I was skeptical, never having used green tomatoes before and because the recipe seemed a bit “crazy” with the juice of two limes, and a whole tablespoon of sugar, and microwaved. That said, even my rather picky 11 year old asked if I could make these every week. A couple of notes: I thought the sugar had to be too much and only put a half tablespoon in, but after I mixed everything else in and tasted it, I put the remaining in as well. It needed it. Also, I didn’t have any red jalapenos on hand, so I used two small green ones, and a white onion instead of red. Everything else was as written. This salsa definitely benefited from sitting for a few minutes before using. I made the salsa first, then formed the patties and grilled, etc. We tried eating the leftover salsa with chips, but that was less impressive than on the burger with the guacamole.
