Ingredients

  1. 1 1/2 pounds skirt steak, cut into 4-inch-long pieces, then cut against the grain into 1/4-inch-thick slices
  2. Salt and freshly ground pepper
  3. 1/4 cup low-sodium soy sauce
  4. 1 serrano chile pepper, seeded and finely chopped
  5. 2 teaspoons sugar
  6. 2 tablespoons freshly squeezed lime juice (1 to 2 limes)
  7. 2 tablespoons olive oil
  8. 2 cloves garlic, grated
  9. 1 bunch scallions, thinly sliced
  10. 6 ounces fresh mushrooms, sliced
  11. 1/4 pound snow peas or green beans
  12. 1 12-ounce can baby corn, drained
  13. 1 red bell pepper, thinly sliced (optional)

Instructions

  1. Season the steak with salt and pepper. In a medium bowl, whisk together the soy sauce, chile pepper, sugar and lime juice until the sugar is dissolved. Add the beef, toss to coat and set aside.
  2. In a large skillet over medium-high heat, heat the oil until shimmering, about 1 minute. Add the beef and cook, stirring, until cooked through, 3 to 5 minutes.
  3. Remove the beef from the skillet and set aside. Allow the liquid in the pan to reduce until thickened, about 4 minutes. Add the garlic and scallions and cook 1 minute more. Add the mushrooms and cook for 2 to 3 minutes more. Add the snow peas, baby corn and bell pepper and continue cooking until all the vegetables are crisp-tender, about 2 minutes. Return the beef to the skillet and toss to combine.

I am in love with this!! I let the meat marinate overnight and used chipotle peppers in adobo instead of 1 serrano chile pepper, seeded and finely chopped smoky sweet greatness.

Great recipe! Very versatile! I also read others mods and here’s my elevated version: used beef tenderloin. Doubled marinade and sliced beef in for 3 hours. Added ginger. Removed beef w tongs to plate and left marinade. Woked sliced mushrooms first til tender. Removed to large bowl. Then cut baby corn and scallions and cooked til tender and added to veggie bowl. Then snow peas. Removed to veggie bowl. While they cooked I made a cornstarch slurry. Added beef to wok and cooked about 4 min. Poured the marinade and slurry together and heated til thickened. Then added beef and veggies back and heated all together. Served over cauliflower rice. Scrumptious!

Delicious!!! Flavors were amazing. I seasoned the skirt steak with a few more seasonings than just salt and pepper (Chinese 5 spice, turmeric, garlic powder, and coriander). I also added fresh ginger to the recipe and also zucchini (one of few veggies both my kids eat). I also made extra sauce for the cauliflower rice that I used instead of jasmine rice (note… if you have picky kids, just go with the regular rice. I did the cauliflower rice and didn’t tell the kids just to see if they noticed…. they did lol and were not fans).

Super fast, easy , tasty and reasonably priced. Added a little baking soda to the marinade ( less than a teaspoon) to ensure the beef would be soft. Forgot to buy the Serrano pepper so used 1/4 tap red pepper flakes. Next time will remember the pepper as I’m sure it will make it even better. Served over rice. Great weekday meal.

So tasty!! I don’t care for bell peppers so I add in some fresh green beans. Also I’m scared of the pepper bc I’m a sissy with hot food so I just skip that part lol soooo good and I love that it uses an affordable cut of meat.

Great recipe, after reading recommendations in other comments I used sesame oil and did each of the veggies first. Very flavorful, especially if you marinate the beef while prepping and cooking your veggies.

Excellent! I used London broil and sliced it super thin while partially frozen. Added bok choy and broccoli, and ponzu sauce like someone else said. And some ginger. I will marinate the meat overnight next time. Yum!

I use sirloin and add a bit of baking soda to the meat while marinating a bit. Super tender and delicious!
