Don’t know what to do with all that leftover ham from Easter? Try this fast and easy ham salad with tangy mustard and crunchy celery. Enjoy it in a sandwich or just on its own.

Ingredients

  1. 1/2 cup mayonnaise, plus more if needed
  2. 2 tablespoons whole-grain mustard
  3. 1 pound leftover baked ham, cut into 1-inch chunks
  4. 1 1/4 cups drained bread-and-butter pickle chips and 1 tablespoon pickle juice, plus more if needed
  5. 2 inner ribs celery, finely chopped, plus 2 tablespoons coarsely chopped leaves from the inner ribs
  6. 1/2 small red onion, finely chopped

Instructions

  1. Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.

I did make this recipe. I used Berman’s brown spicy mustard. I also used homemade pickles so I backed off and just used 1/4 cup chopped and 2 teaspoons of brine. I really wanted to add some sugar, but I’ll wait for the mixture to chill and the flavors to come together. The celery leaf is such a strong flavor I hope it doesn’t take over the salad.

My mom made the best ham salad and I’ve been trying for years to duplicate it. This recipe is the closest I’ve found! I used about 1/2 a jar of sweet pickle relish, shallots instead of the red onion and added celery seed in with the actual celery. Delicious! Easy and delicious- harkens back to childhood and eating “Underwood Deviled Ham”. Tasty with crackers, as a sandwich or on a bed of mixed greens. I added two small sweet gherkins. You can add hard boiled eggs too but I didn’t this time.

Very good combination! Followed it to a ‘T’ using leftover homemade honey/mustard glazed ham, my wife makes garden bread and butter pickles, we used a garden red onion and we have some German spicy whole grained yellow mustard.  Nice kick!! I was going to add pepper but I’m glad I did not!
