Ham Salad in Endive Cups

Ingredients

  1. 1/2 cup mayonnaise
  2. 1 teaspoon Dijon mustard
  3. 2 dashes hot sauce
  4. 1 tablespoon chopped fresh dill, plus fronds for garnish
  5. 1/4 teaspoon pepper
  6. 8 ounces deli ham, finely chopped
  7. 1 hard-boiled egg, peeled and finely chopped
  8. 1 stalk celery, finely chopped
  9. 1 tablespoon dill pickle relish
  10. 20 endive leaves, for serving
  11. 2 slices Cheddar, cut into small triangles

Instructions

  1. Combine the mayonnaise, mustard, hot sauce, dill and pepper in a small bowl and mix until well blended.
  2. In a medium bowl, mix together the ham, egg, celery and relish. Pour the dressing over and mix to combine.
  3. To serve, place a spoonful of the ham salad on the wide end of an endive leaf. Garnish with a piece of cheese and some dill.

Made for our derby party 2023. Followed recipe except chopped 2 small dill pickles. Used good deli sliced ham. Made the mixture the day before and on day of party placed in endive leaves. May have to drain a bit. Did not add the olive nor the cheese slice. Everyone enjoyed.

Haven’t made it yet, but are you using dill relish in this, because Ree didn’t say dill or sweet in the episode and I was assuming it was sweet?

This recipe was amazing! I wrote down this recipe during the show and immediately went to the grocery store. Eating this gave me new life. In Ree fashion, I made some adjustments – I used all of her ingredients but added (all chopped) 1/2 a red onion, 1/2 a shallot, cilantro and capers. I also plan to stuff pita pockets with this for lunch. LOVE this recipe!!!!!

I added about a cup of shredded chopped Swiss cheese to the mix and ate it on Ritz crackers. It was great. I will definitely make this again. It was easy to make and tastes great

This is a great appetizer where you want finger food so people can walk around. Will make again. I also used the endive with store bought chicken salad for a quick appetizer.

tasted pretty good, i got a free endive at the store as the clerk and manager didn’t know what it so didn’t charge me… other stores didn’t have it except wholefoods that wanted 6.99 per pound.
