Ingredients

  1. 4 cups dried pinto beans
  2. 1 ham hock
  3. One 15-ounce can tomato sauce
  4. 1/4 cup chili powder
  5. 1/4 cup brown sugar
  6. 2 to 3 tablespoons white vinegar
  7. 5 cloves garlic, minced
  8. 1 onion, diced
  9. Salt and freshly ground black pepper

Instructions

  1. Rinse the beans under cold water, sorting out any rocks/particles. Cover in cold water and soak for 6 to 8 hours.
  2. Drain the beans and place in a stockpot with the ham hock; cover with fresh water by 2 inches. Add the tomato sauce, chili powder, brown sugar, white vinegar, garlic, onions, 1 tablespoon salt and 2 teaspoons pepper.
  3. Bring to a boil, lower the heat and simmer, adding a little more liquid if the level gets too low, until the beans are tender, 3 to 4 hours. Taste, and season with additional salt and pepper if needed.

As a born and raised Westerner who recently relocated to the southeast and had never cooked dried beans, let alone seen a ham hock, this is an easy to follow and delicious recipe. Even my Southern neighbors thoroughly enjoyed the chili beans (and asked for the recipe). Thank you for sharing it with us.

I really despise recipes like this that go against cooking gospel and I question the validity of this recipe. In all my readings about cooking with dried beans, acidic ingredients should not be used until the beans have cooked until well softened. This recipe has one adding tomato sauce, vinegar and brown sugar (molasses in the sugar is acidic) at the beginning, I don’t see how the beans will soften. I challenge those who have made these to give an honest review of how they turned out.

Ree-licious!  Hubby and I love beans!  I usually love beans as more of a side dish.  I’m normally not one of those who can sit down and just eat a big bowl of beans and call it a meal.  But, there is something about these Chili Beans.  With their hint of sweetness and a bit of spicy and The zip from the vinegar, I just can’t resist eating a big ‘ol bowl full!
