With just a few pantry ingredients, you can make cinnamon-flavored spider web fritters. They’re so good it’s scary!
Level: Intermediate
Total: 40 min
Active: 40 min
Yield: about 30 webs

Ingredients

  1. Vegetable oil, for frying
  2. 1 1/2 cups all-purpose flour
  3. 1 tablespoon granulated sugar
  4. 3/4 teaspoon baking powder
  5. 3/4 teaspoon ground cinnamon
  6. 1/8 teaspoon fine salt
  7. 3/4 cup milk
  8. 1 large egg
  9. 1 tablespoon maple syrup, plus 1/4 cup for brushing
  10. 1/2 cup confectioners’ sugar
  11. Jelly spiders, orange or black nonpareils, for garnish, optional

Instructions

  1. Pour enough oil into a large skillet so it’s about 1 inch deep. Heat the oil over medium-high heat until a deep-fry thermometer registers between 280 to 300 degrees F.
  2. Meanwhile, whisk together the flour, granulated sugar, baking powder, cinnamon and salt in a large bowl. Make a well in the center and add the milk, egg and 1 tablespoon of the maple syrup. Whisk the dry and wet ingredients together until smooth.
  3. Transfer the batter to a large pastry bag fitted with a #3 or 4 open tip. Working in batches and making a few at a time, carefully squeeze the batter into the oil in a circular pattern and then back and forth, to make a free-form spider web-like design, 3 to 4 inches in diameter. Cook until the bottoms are golden, about 2 minutes. Using tongs or a slotted spoon, turn the fritters over and cook until golden on the other side, about 1 minute more. Transfer the fritters to paper towels to drain briefly. Repeat with the remaining batter.
  4. Brush the webs lightly with maple syrup and dust with confectioners’ sugar. Serve warm or at room temperature garnished with jelly spiders or nonpareils if using.

to answer your question, xochiotomi_3552405, i would add it with the dry ingredients only because of the order it is listed in the recipe. I haven’t made this yet but am going to make it for my halloween party in a couple of weeks:-)

This recipe looks wonderful and I can’t wait to try and make an actual spider web shape, but when do I add the cinnamon? It isn’t mentioned in the directions… should it be mixed in with the batter or sprinkled on top with the powdered sugar?
