Ingredients

  1. 3 cups shredded rotisserie chicken
  2. 1 cup store-bought refrigerated guacamole
  3. 1/2 cup peeled small diced fresh mango
  4. 1/2 cup finely diced red onion
  5. 1/2 cup toasted pepitas
  6. 1 tablespoon fresh lime juice
  7. 1 tablespoon store-bought refrigerated pesto
  8. Kosher salt and freshly ground black pepper
  9. Lettuce leaves (such as Bibb) or flatbread, for serving

Instructions

  1. Combine the chicken, guacamole, mango, onion, pepitas, lime juice and pesto in a mixing bowl, then season to taste with salt and pepper. Serve with lettuce leaves or flatbread for easy eating.

This was a huge hit at my house! Putting a little pesto in with guacamole is unusual, but it really worked to give this salad a little something extra and unexpected. Plus, I love that it can be made ahead. I prepared it a few hours ahead of time, then just refrigerated the dish until we were ready to eat! Definitely a keeper recipe.

Love it! Added jalapeño pepper and green apple instead of mango. Put over flatbread. Delicious, easy dinner!

This was a nice lunch and a change from mayonnaise. I enjoyed the mango. Although I like pesto, it wasn’t necessary in this dish. I also omitted the pepitos, only because I forgot to buy them. Easy and flavorful.

The reviews for this were mixed at our house. My husband quite liked it, especially the next day for lunch after the flavors blended…..and he added some mustard. That may be the zing it’s missing. I, however, did not care for this at all. The flavors did not marry well for me.

Both my husband and I loved this so much that I tried it again with potatoes and it made a delicious potato salad as well.
Great for those of us who are lactose intolerant and need mayo substitutes.

I didn’t like this at all! The guacamole made it mash and like baby food. Expensive and just not good. Very bummed.

Absolutely delicious!  Even my hubby who is not a fan of guacamole loved it. I made my own guacamole and served it on warm naan bread.  Forgot the pepitas…..next time will remember. Crunch would be good.

Big hit at my house this evening. I grilled chicken thighs and made my own guacamole and pesto. Tasted decadent even though pretty healthy.
