Greek Guacamole

Ingredients

  1. 3 large ripe avocados
  2. Juice of 1 lemon
  3. 1/4 cup finely diced red onion
  4. 1/4 cup jarred sliced roasted peppers, drained and chopped
  5. 1/4 cup pitted kalamata olives, drained and chopped
  6. 2 Roma tomatoes, diced
  7. 1 clove garlic, grated
  8. 3/4 cup crumbled feta
  9. 1/4 cup chopped fresh parsley leaves
  10. 3 tablespoons chopped fresh dill
  11. 1/2 teaspoon kosher salt
  12. 1/4 teaspoon ground cumin
  13. 1 cucumber, sliced into thin rounds, for serving
  14. Blue tortilla chips, for serving

Instructions

  1. Halve the avocados and remove the pits. Dice the avocado inside the skin and scoop into a medium bowl. Add the lemon juice and mash with a fork until you get the desired consistency.
  2. Add the red onion, roasted peppers, olives, tomatoes, garlic and most of the feta, parsley and dill, reserving some for garnish. Add the salt and cumin and mix together until well combined. Taste and adjust the seasoning if needed.
  3. Transfer to a serving a bowl and sprinkle over the remaining feta, parsley and dill. Serve with the sliced cucumbers and tortilla chips.

It truly shows that you know nothing about Greek food because there’s no such thing as Greek guacamole, this was created by an American person who doesn’t realize that Greece doesn’t have avocado trees that grow their. you really should have done some research on the fact that the country of Greece doesn’t grow avocados

The family went absolutely bananas for this recipe! It’s definitely a fun twist on a traditional guacamole. I found that the amount of salt and cumin were perfect and not overwhelming. The salt definitely balanced well with the saltiness of the olives. And the dill gave it in an especially beautiful twist. This would be perfect to serve at a party to impress your guests!
