Ingredients
- 4 beef tenderloin steaks
- 2 cups red wine
- 2 tablespoons garlic and herb dressing mix
- 2 teaspoons ground black pepper
- 1 (4.5-ounce) jar marinated mushrooms, finely chopped
- 1 cup blue cheese, crumbled
- 1 teaspoon Italian salad dressing mix
- Fresh oregano sprigs
Instructions
- Rinse steaks under cold water and pat dry. Place in zip-top bag and add red wine, dressing mix, and pepper. Squeeze air out of bag and seal. Gently massage bag to combine ingredients. Marinate in refrigerator for 1 to 3 hours
- Set up grill for direct cooking over high heat. Oil grate when ready to start cooking. In a medium bowl, combine chopped mushrooms, blue cheese, and Italian seasoning; set aside.
- Remove steaks from marinade and discard marinade. With a sharp knife cut a pocket into the side of each steak, being careful not to cut through. Stuff steaks with mushroom mixture and secure with toothpicks. Place on hot, oiled grill and cook 5 to 7 minutes per side for medium (160 degrees F). Remove from grill.
- To serve, remove toothpicks. Garnish steaks with sprigs of fresh oregano and serve hot.

It was as if millions of taste buds cried out in terror and were suddenly silenced.
If you are interested in a very nice twist to carpetbaggers steak, simply stuff them with canned smoked oysters. I like to serve it with a Bearnaise sauce. You will never go back to fresh oysters again. We found this out when we substituted smoked for fresh. Forget all the other nonsense. Just marinate in a little Worcestershire sauce and garlic powder. It’s super easy and mmm mmm good.
Served at a dinner party for our neighbors and it was a hit. Will make it again soon!

The use of all these ingredients to make this perfect cut of beef “better” resulted in a disappointment…like someone mentioned, a little salt, pepper and olive oil and, voila, a perfect steak.
blue cheese and steak compliment each other I think if you don’t like blue cheese its not for you common sense when looking at these recipes !!! and I wonder why someone who would rather have salt and pepper would ever try this recipe…you have to have the palet for it…. its great flavors rolled into one!!! I love this cook she really alot of great recipes ones ppl actually like…I haven’t tryed one yet that I didn’t like… but I would say if it was not to my liking…rowdiro
It took forever to get the stuffing into the steak and then to get it stay. All i did was fiddle and fiddle with it! Plus, in the end it didn’t taste very good All the leftover steak made me want to pull my hair out!!
The steak is horribly seasoned and the stuffing is impossible to keep in and tastes worse. The meat is ruined on both the outside and the inside!
