Ingredients
- 1 cup cool strong coffee
- 6 ounces molasses, by weight
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon ground ginger
- 6 to 8 sprigs fresh thyme
- 1/2 teaspoon freshly ground black pepper
- 4 (6 to 8-ounce) bone-in, 1-inch thick pork chops
Instructions
- Place all of the ingredients into a 1-gallon zip top bag, seal, and shake to combine. Place in the refrigerator to marinate for at least 2 hours or up to overnight.
- Preheat grill to medium-high.
- Remove the pork chops from the marinade. Transfer the marinade to a small saucepan and place over high heat. Bring to a boil, reduce heat to medium-high, and boil gently, stirring often, until reduced to about 1/2 cup liquid, 12 to 15 minutes. Remove the thyme stems after the glaze has reduced. Meanwhile, grill pork chops 3 to 4 minutes per side or until they reach an internal temperature of 145 degrees F. Allow the pork chops to rest 4 to 5 minutes before serving with the glaze.

Reviews
Outstanding combo of flavors. Marinated pork overnight for especially tender chops. Will definitely make again!
The pork chops turned out very good and tender, I had problem with the sauce, it was awful, I had to improvise…
Can the pork chops be baked in the oven with this marinade? Maybe get a good sear on both sides first then bake at 375 degrees.
This was okay, but using the marinade as a glaze didn’t work. When I boiled the marinade, the proteins from the meat coagulated, it was very unappealing. If I were to make it again, I would double the marinade, and use half for the glaze.
I used the marinade (doubled) with a pork loin roast. Very good. But what to do with the leftovers?
This is one of the best pork marinades I have ever used. My 8 year old even gobbled it right up. I doubled the recipe for extra “dipping” sauce. Alton never lets me down.
Great grilling recipe and simple, tasty marinade. Easy.
Love the flavor! I especially like marinating sliced pork tenderloin, which doesn’t need quite as much marinating then grilling.
This was such a nice change from plain pork chops. Everyone loved them.
I only had about 5 ounces of molasses so I added an ounce of dark brown sugar which I think is a little bit sweeter than pure molasses. I think the extra sugar was a nice addition. Also, I didn’t have any fresh garlic on hand so I used a 1/2 teaspoon of garlic powder. Excellent.
Easy and outstanding!
