Molasses Coffee Marinated Pork Chops

Ingredients

  1. 1 cup cool strong coffee
  2. 6 ounces molasses, by weight
  3. 2 tablespoons apple cider vinegar
  4. 1 tablespoon Dijon mustard
  5. 2 cloves garlic, minced
  6. 1 teaspoon kosher salt
  7. 1/2 teaspoon ground ginger
  8. 6 to 8 sprigs fresh thyme
  9. 1/2 teaspoon freshly ground black pepper
  10. 4 (6 to 8-ounce) bone-in, 1-inch thick pork chops

Instructions

  1. Place all of the ingredients into a 1-gallon zip top bag, seal, and shake to combine. Place in the refrigerator to marinate for at least 2 hours or up to overnight.
  2. Preheat grill to medium-high.
  3. Remove the pork chops from the marinade. Transfer the marinade to a small saucepan and place over high heat. Bring to a boil, reduce heat to medium-high, and boil gently, stirring often, until reduced to about 1/2 cup liquid, 12 to 15 minutes. Remove the thyme stems after the glaze has reduced. Meanwhile, grill pork chops 3 to 4 minutes per side or until they reach an internal temperature of 145 degrees F. Allow the pork chops to rest 4 to 5 minutes before serving with the glaze.

Can the pork chops be baked in the oven with this marinade? Maybe get a good sear on both sides first then bake at 375 degrees.

This was okay, but using the marinade as a glaze didn’t work. When I boiled the marinade, the proteins from the meat coagulated, it was very unappealing. If I were to make it again, I would double the marinade, and use half for the glaze.

This was such a nice change from plain pork chops. Everyone loved them.

I only had about 5 ounces of molasses so I added an ounce of dark brown sugar which I think is a little bit sweeter than pure molasses. I think the extra sugar was a nice addition. Also, I didn’t have any fresh garlic on hand so I used a 1/2 teaspoon of garlic powder. Excellent.
