Red Rocker Margarita Chicken

Ingredients

  1. 2 jalapenos, thinly sliced rounds
  2. 3 tablespoons fresh cilantro leaves
  3. 4 tablespoons tequila (recommended: Cabo Wabo Reposado)
  4. 1 tablespoon garlic, minced
  5. 1 teaspoon red chili flakes
  6. 1 teaspoon ground cumin
  7. 1 tablespoon dried oregano
  8. 2 limes, juiced
  9. 2 teaspoons salt, divided
  10. 4 boneless skinless chicken breasts
  11. 2 red bell peppers, roasted, skinned, seeded, julienne
  12. 1 cup all-purpose flour
  13. 1 teaspoon granulated garlic
  14. 2 cups canola oil
  15. 4 Kaiser rolls
  16. 4 tablespoons mayonnaise
  17. 1/4 green cabbage, thinly sliced
  18. 1/4 red onion, thinly sliced
  19. 4 ounces provolone cheese, sliced

Instructions

  1. In a medium mixing bowl add jalapenos, cilantro, tequila, garlic, red chili flakes, cumin, oregano, lime juice, and 1 teaspoon salt. Add the chicken breasts and red bell peppers to resealable gallon bag and pour in marinade. Let marinate in refrigerator for 4 to 8 hours.
  2. Heat grill to high. Remove chicken from marinade, and add chicken to the grill.
  3. In a small mixing bowl add flour, remaining 1 teaspoon salt and the granulated garlic.
  4. Heat the canola oil to 350 degrees F.
  5. Remove bell peppers from marinade and dredge in flour and fry until crispy. When done drain on paper towels.
  6. Cook chicken thoroughly on both sides, remove from heat and cover. Let sit for 5 minutes Remove chicken from the bone and thinly slice or shred.
  7. Lightly toast rolls. Spread mayonnaise evenly among the rolls and then stack evenly with the cabbage, onion, chicken breast, fried peppers, and top with cheese.

I use Ciabatta rolls/bread instead….awesome!!! I am asked repeatedly to make this…It IS a large sandwich though! Home run here!!!!

Amazing!  Chicken was very moist and very flavorful!!  I used jarred roasted red peppers with some of the juice, and I marinated it overnight. I did not fry the peppers, I used the bagged fried jalapeños from the salad section for the crispy attribute. I also used a bag of pre shredded coleslaw mix to save time. It all just worked well and melded together in perfect harmony!!!  I will definitely make this chicken sandwich again!!

Guy has hit a home run with this won. Since I first made this I am repeatedly asked to make it again from family and friends. I frequently make Giada’s Scallion and Mozzarella Corn Bread but substitute sharp cheddar and jalapenos from and jar instead.

I followed this recipe EXACTLY and it was an absolute disappointment to say the least! If you cut open a fresh jalapeno and smell it, that’s exactly what the chicken tasted like. And it definitely needed some kind of sauce other than mayo. It was a disaster. The fried peppers were not worth the trouble as they added nothing to the sandwich. It was not spicy as most said. It was just a big blah on a bun! Everyone who said this was “the best chicken sandwich ever!”, you deserve to have your “foodie card” pulled!! We ended up ditching the sandwich all together and ate chips and salsa for dinner. I usually LOVE Guy’s flavorful recipes, but what a loser this one was. Recommendation: Don’t bother, try something else for dinner. You’ll thank me for it!

This was delicious! I followed the recipe exactly except for: Used regular hamburger buns, I didn’t use cheese or red onions, and rather than topping the sandwich with mayo and cabbage I made “cole slaw”. I bought cole slaw mix (the shredded veggies and mixed in mayo and lemon juice, salt and pepper, and put that on top of the sandwich. Very moist with lots of different textures and flavors. *Also, I didn’t realize the peppers were supposed to be roasted and peeled! But they still came out great!

This chicken is awesome! I made the chicken alone w/ sides instead of a sandwich and it was wonderful. Try Guy’s potato recipe that uses bacon, cheese, and crab boil seasoning with it. I’ve actually made it 4 times and everytime I serve it people rave over it. If you’re out of tequila (from making too many margaritas you can use rum or another alcohol to marinate the chicken. I added extra cilantro because my family loves it.
