Ingredients

  1. 1 lime, juiced
  2. 2 tablespoons honey
  3. 1 rounded teaspoon cumin
  4. A handful cilantro, finely chopped, about 1/2 tablespoons
  5. 2 tablespoons extra-virgin olive oil, canola, or corn oil
  6. Four 6 to 8-ounce boneless skinless chicken breast
  7. 1 teaspoon grill seasoning blend or coarse salt and pepper
  8. Toppings: lettuce, tomato, red onion, and sliced avocado
  9. 1 cup prepared salsa verde
  10. 4 crusty rolls, split
  11. Five Vegetable Slaw Salad, recipe follows
  12. Assorted tortilla chips, for serving
  13. 1 pound packaged shredded cabbage
  14. 1 large red bell pepper, seeded and cut across into thin slices
  15. 1 large green bell pepper, seeded and cut across into thin slices
  16. 4 scallions, sliced thinly on an angle (greens and whites)
  17. 1/2 European seedless cucumber, halved lengthwise and thinly sliced
  18. 2 limes, juiced
  19. 1 /4 cup (3 healthy drizzles) honey
  20. 3 tablespoons (a couple of glugs) vegetable or light colored oil
  21. Salt and pepper

Instructions

  1. Combine first 5 ingredients in a small bowl. Sprinkle chicken with seasoning blend or salt and pepper. Coat chicken in dressing and set aside for 10 minutes.
  2. Grill chicken on an indoor electric grill 6 to 7 minutes on each side or pan fry over medium high heat in a large nonstick skillet uncovered 6 minutes per side.
  3. Slice chicken breasts on an angle and pile meat roll bottoms. Top with lettuce, tomato, red onion and sliced avocado. Spread salsa on roll tops as a condiment. Serve sandwiches with Five Vegetable Slaw Salad and assorted tortilla chips.
  4. Combine vegetables in a bowl. In another small bowl, whisk lime juice and honey, and drizzle in oil to combine dressing. Pour dressing over slaw and season with salt and pepper, to taste.

Only made the chicken on Kaiser rolls, served with lime tortilla chips. It’s a keeper. Next time with rice instead of rolls. Very tasty. 3 generations at the dinner table: it’s a keeper.

This chicken sandwhich was so good.  I used Hatch Chili Salsa Verde with it.  I can think of many other ways to use chicken with this marinade.  My husband just loved it!  I served it with fresh corn on the cob.

This turned out good… It made a lot of slaw which we did not end up eating all of it. I marinated the chicken for about 5 hours… It had good flavors. I made tomatillo salsa verde for the AR site to put on the sandwiches as a condiment. I would make this again but would half the slaw

We ended up marinating the chicken overnight due to a change in dinner plans and the chicken was really tasty. We loved the slaw too. You don’t need to make a sandwich of this. It stands alone

I picked this recipe because we had leftover cabbage and carrots from Guy Fieri’s mu shu chicken. It’s a good way to use the same ingredient in completely different ways.

I made this recipe for my girls and they loved it. They only thing I changed was the cabbage. We don’t really care for cabbage, so I used broccoli slaw instead. Great. Will make it again.

I don’t know if it was the marinade or my new George foreman grill but hubby said that was ” the best chicken I ever had!” It was just enough to favor the chicken but not too sweet. We did not make the sandwich…the chicken was flavorful to stand alone. Keeper!

This was so delish! I didn’t have honey so I used sugar instead, and I made a cilantro lime mayo for the bread instead of pico. This was so good. I was stuck in the “same dinner” rut. I think this got me out of it! My entire family loved these!
