Grilled BBQ Chicken Sandwiches

Ingredients

  1. 2 cups ketchup
  2. 1/2 cup apple cider vinegar
  3. 1/2 cup dark brown sugar
  4. 2 tablespoons Worcestershire sauce
  5. 1 teaspoon freshly ground black pepper
  6. 1 teaspoon garlic powder
  7. 1 teaspoon dry mustard
  8. 1 teaspoon onion powder
  9. 1 teaspoon hot sauce
  10. Olive oil, for lightly coating the chicken
  11. 4 chicken cutlets, pounded to 1/2 inch thick
  12. Kosher salt and freshly ground black pepper
  13. 8 potato buns
  14. Mayonnaise, for spreading
  15. 1 medium red onion, sliced
  16. 16 bread-and-butter pickle slices

Instructions

  1. For the barbecue sauce: In a medium saucepot over medium heat, add the ketchup, apple cider vinegar, dark brown sugar, Worcestershire sauce, black pepper, garlic powder, dry mustard, onion powder, hot sauce and 1 cup water and stir to combine. Bring the mixture to a simmer, then reduce the heat to low and cook until the sauce is thickened, about 1 1/2 hours.
  2. For the chicken: Heat a grill pan over medium-high heat.
  3. Lightly drizzle some olive oil onto the chicken to prevent the chicken from sticking to the grill pan. Season the chicken with salt and pepper. When the grill pan is hot, add the chicken and cook until char marks appear and the chicken is cooked through, 2 to 3 minutes per side.
  4. Toss the chicken with the barbecue sauce. Let simmer on low until ready to serve, to infuse the chicken with the flavor of the sauce.
  5. For the sandwich: Spread an even layer of mayonnaise on the top and bottom of a potato bun, add the chicken, a few red onion slices and 2 bread and butter pickles. Top with the other half of the potato bun.

This recipe is delicious.  It IS very sweet, but I didn’t find it to be too spicy at all – nor did my kids (who are sensitive to that).  I used tapatio for the ‘hot’ in the bbq sauce recipe, and it was perfect.  This really was a nice summer night meal.  I served it with Ina’s Cape Cod salad, it was so great.  Do it just as Nancy says, with red onion and bread and butter pickles.  so YUMMY!!

This is one of the best sandwiches I have ever had!  Its even better the second day and the chicken becomes more shredded!  I love heat(spice) and used Jalapeno Bread N Butter pickle slices for a home run!!  I may try this as sliders for our next family day!!

My entire famity loved it! Mine didn’t really get thick but wasn’t super runny either! Kind of sweet when it first hits your tongue but then gradually it gives a little kick but wasn’t too spicy for my kids! Thank you for a great recipe! I’ll never buy bbq sauce at the store again!

Excellent BBQ sauce! It definitely has a kick- I will dial it back to 1/4 tsp hot sauce next time- just personal preference! Would be equally good on pork etc.
