Ancho-Lime Marinated BBQ Chicken

Ingredients

  1. 2 whole chickens
  2. 1/2 cup light olive oil
  3. 1/2 cup lime juice
  4. 1 tablespoon minced garlic
  5. 2 tablespoons ancho chili powder
  6. 1 tablespoon ground cumin
  7. 2 teaspoons black pepper
  8. 2 tablespoons Worcestershire sauce

Instructions

  1. Cut the chickens into legs, thighs, breasts, and wings and place in a large pan. Whisk together the remaining ingredients in a small bowl and pour over the chicken. Cover the chicken and refrigerate overnight.
  2. Preheat the grill. Place the chicken pieces on the grill at a 45 degree angle to establish good grill marks. Once the chicken easily releases from the grill, turn it over to continue cooking. Make sure to season the chicken with salt while it’s cooking. Once the internal temperature reaches 165 degrees F, or its juices run clear, remove the chicken from the grill. Let the chicken rest for 5 to 10 minutes before serving.

This is my “go to” recipe for chicken on the grill. It’s wonderful. I’ve been making it for years. I’ll often use half ancho chili powder, half smoked paprika, rather than all ancho.

:This was very good! I baked it in the oven rather than starting the grill. Also I had dried ancho chiles that I rehydrated, chopped and put in the mixture. I think next time I will use the zest of the lime and maybe add a little cilantro.
