Spicy Grilled Cheese

Ingredients

  1. 2 slices sourdough bread
  2. 2 tablespoons mayonnaise
  3. 1 cup Jalapeno Pimento Cheese, recipe follows
  4. 4 ounces cream cheese, softened
  5. 1/2 cup mayonnaise
  6. 2 tablespoons adobo sauce from canned chipotles
  7. 1 tablespoon Dijon mustard
  8. 1/2 teaspoon freshly ground black pepper
  9. Pinch of cayenne or dash of hot sauce
  10. Pinch kosher salt
  11. 2 cups grated sharp Cheddar
  12. 2 cups grated smoked Gouda
  13. 4 ounces sliced pimentos
  14. 1/2 cup jarred sliced jalapeños, finely chopped
  15. 2 teaspoons chopped fresh dill
  16. Crackers, for serving
  17. 1 cup Castelvetrano olives, for serving

Instructions

  1. Heat a nonstick skillet over medium heat. Spread each slice of bread with 1 tablespoon of the mayonnaise. Place one piece of bread, mayonnaise-side down, into the skillet. Top with the Jalapeno Pimento Cheese. Place the second slice of bread, mayonnaise-side up, onto the cheese. Using a spatula, press together and cook until golden, about 2 minutes per side. Slice and serve.
  2. Combine the cream cheese, mayonnaise, adobo sauce, Dijon mustard, black pepper, cayenne or hot sauce and salt in the bowl of a food processor. Process until combined. Add almost all of the Cheddar and Gouda, reserving about 2 tablespoons of each in a bowl, and pulse until well combined again. Add the contents of the blender to the reserved cheese and stir to combine. Fold in the pimentos, jalapeños and dill, then chill before serving.
  3. Serve as a dip with crackers and olives.
