Grilled Cheese with Everything Bagel Seasoning

Ingredients

  1. 1/4 cup cream cheese, at room temperature
  2. 3 scallions, sliced
  3. 1 tablespoon butter, plus more as needed
  4. 4 thick slices seeded wheat or country white bread
  5. Everything Bagel Seasoning, for sprinkling, recipe follows
  6. 2 ounces mozzarella, thinly shaved or sliced
  7. 4 slices tomato, cut into half-moons
  8. 4 thin slices red onion, cut into half-moons
  9. 1 tablespoon capers
  10. Kosher salt
  11. 1 teaspoon sesame seeds
  12. 3/4 teaspoon poppy seeds
  13. 1/2 teaspoon dried minced garlic
  14. 1/2 teaspoon dried minced onion
  15. 1/4 teaspoon kosher salt

Instructions

  1. Mix together the cream cheese and scallions until well combined.
  2. Melt the butter in a large skillet over medium heat. Add the bread slices and toast until lightly browned on one side; remove to a cutting board, toasted-side up (the toasted sides will become the insides of your sandwich). Spread all four slices with scallion cream cheese, then sprinkle with Everything Bagel Seasoning. Top two of the slices with mozzarella, sliced tomato and red onion. Press the capers into the cream cheese on the other two slices. Form sandwiches.
  3. Add a bit more butter to the skillet if it seems dry. Place the sandwiches in the skillet, cover with a lid and cook until toasted on the bottom, 3 to 5 minutes. Flip the sandwiches and cook, covered, until toasted on the reverse side and the mozzarella is melted, about another 2 minutes. Sprinkle with a pinch of salt, cut in half and serve.
  4. Mix together the sesame seeds, poppy seeds, dried minced garlic, dried minced onion and salt.

Absolutely awesome! The blend of flavors gave it such a great taste. Made it exactly according to the recipe and just used wheat sandwich bread we had on hand. My husband gave this a 10+ rating. I think it would have been greater than a 10+ with rye or pumpernickel. We both loved the sandwich! Thanks Molly!

This deserves 20 stars.  So easy and delicious.  I used a nice rye bread and my husband gobbled it down.  I don’t care for capers and he doesn’t like onions so those were left out.  All I heard during dinner was, “These are great!!  When are we having them again?”  This recipe was a winner in our house!!
