Ingredients
- 1 teaspoon honey
- 1 canned chipotle pepper in adobo (if you like spicy, add an additional 1/2 teaspoon or more of the adobo sauce)
- 1/2 cup plus 2 tablespoons mayonnaise
- Kosher salt and freshly ground black pepper
- 4 slices white bread
- 4 thick slices processed American cheese
- 4 slices cooked bacon
- Sweet pickles, for serving
- Potato chips, for serving
Instructions
- Put the honey, chipotle pepper, 1/2 cup of the mayonnaise and some salt and pepper in a food processor or blender and puree until smooth. Set aside.
- Heat a large heavy skillet or griddle over medium heat.
- Place the bread on a work surface and spread the remaining 2 tablespoons mayonnaise on both sides of each slice. On the inside of 2 slices, spread on the chipotle mayonnaise to your liking, adding more if you prefer it spicy. Top each sandwich with 2 slices cheese, 2 slices bacon and a remaining bread slice.
- Cook the sandwiches until the cheese is completely melted and the bread is golden brown, 3 to 4 minutes on each side. You can use a metal mixing bowl to dome the sandwiches and allow the cheese to melt faster. Slice the sandwiches in half and serve immediately with sweet pickles and potato chips.

I love this recipe! I’ve been making it a lot working from home and it’s the perfect comfort food with a little heat from the chipotle in adobo. This has quickly become one of my go tos.

Saw this on The Kitchen the other day and I had to try it. I didn’t have Valveeta but had sharp cheddar. The chipotle mayo steps it up and how can you go wrong with bacon. This will definitely be one of my top comfort foods! Thanks to Katie’s grandpa.

My goodness! Except for the pepper this is exactly the way my mother made a grilled cheese sandwich – and I do too. Friends think I’m crazy to use v*****a bu don’t knock it until you try it.
I just made this for lunch. It is sooooo good! Love the little kick from the chipotle mayo. I used American cheese since that’s what I had. It was warm & gooey & delicious.
I’m afraid that I changed the recipe a lot, so maybe my review isn’t worth very much, and may not even get published. But it DID inspire me to try it with variation — especially the use of of the spiced-up mayonnaise AND on BOTH of the slices of bread.
I substituted ham-off-the bone for the bacon and made a mini-sandwich inside the sandwich — bottom slice of bread with mayo, slice of ham, cheese, onion, tomato, another slice of ham, top slice of bread with mayo. Yum-me. So good I proceeded to make a second one. And could have made a third. I don’t have a blender, so I just mixed the ingredients into the mayonnaise with a fork. Next time I’ll probably add some cumin and some paprika.
