Grilled Cheddar Cheese Sandwich

Ingredients

  1. 4 tablespoons unsalted butter, at room temperature
  2. 1/4 cup mayonnaise
  3. 1/2 teaspoon smoked paprika
  4. Salt and freshly ground black pepper
  5. 8 slices sourdough bread
  6. 2 tablespoons cream cheese, at room temperature
  7. 1 cup shredded Cheddar

Instructions

  1. Preheat a skillet over medium heat. Mix the butter, mayo and smoked paprika in a small bowl until well combined. Sprinkle with salt and pepper.
  2. Lightly butter one side of each of the bread slices with the mayo mixture. Add the cream cheese to the remaining mayo mixture and mix well to combine. Spread some of the cream cheese mixture on the other side of each of the bread slices.
  3. Distribute the Cheddar on the cream cheese-side of 4 of the bread slices. Place the remaining 4 bread slices on top. Place the sandwiches in the skillet and cook until golden on the bottom, about 3 minutes. Flip the sandwiches and place a heavy-bottomed skillet on top of the sandwiches and cook until golden brown and the cheese is melted, about 4 minutes.

This was good, fast and super easy to make. My husband absolutely said it was the best grilled cheese he’s ever had. We’ll definitely be making it again, but I think next time we won’t use shredded cheese and I’ll experiment with the cheese on the inside. I wasn’t a huge fan of the shredded cheese, but over all it was delicious!

I didn’t have cream cheese and used shredded mozzarella instead of cheddar and it still resulted in a great grilled cheese. I don’t think I’ll be able to make a regular one without thinking how bland it is. I may even keep some of the spread in the fridge ready to go.

Never thought to put mayo on the outside of bread..gave amazing golden color. I mean grilled cheese sounds like a “duh” kind of thing..why do you need a recipe..but these little tweaks take it from plain wunda bread and melted cheese to something extra special and delish for no extra work!

This was tasty and was easy to add a burger patty and grilled onions to make a patty melt. No need to put the butter mixture on the inside and outside though, it’s not as a greasy and still as delicious if just put on the outside :

I make this last night. This was AWESOME! I can’t wait to make it again. Even my son who if he eats too much cheese gets sick was able to eat it. I did add caramelized onions but other then that followed the recipe. Keep the recipes coming Melissa :

Great flavor, had all ingredients already in the fridge, except for the sourdough bread…so, I used regular sandwich bread since that’s what I had on hand. Very creamy & delicious!
