Homemade Granola Parfait

Ingredients

  1. 5 cups old-fashioned rolled oats
  2. 2 cups pecans, coarsely chopped
  3. 1 cup sunflower seeds
  4. 1 cup peanuts, chopped
  5. 3/4 cup packed light brown sugar
  6. 1/2 cup honey
  7. 1/4 cup coconut oil, melted
  8. 1 tablespoon vanilla extract
  9. 2 teaspoons ground cinnamon
  10. 1 teaspoon sea salt
  11. 1/2 cup golden raisins
  12. 1/2 cup dried cranberries
  13. 1/2 cup unsweetened coconut
  14. 2 cups Greek yogurt
  15. 2 cups mixed berries, such as blackberries and blueberries

Instructions

  1. Preheat the oven to 250 degrees F.
  2. Combine the oats, pecans, sunflower seeds and peanuts in a large bowl. In a separate mixing bowl, combine the sugar, honey, oil, vanilla, cinnamon, salt and 1/4 cup water. Pour the liquid mixture over the oat mix and stir until combined. Pour onto two baking sheets and spread evenly.
  3. Bake 40 minutes, stirring halfway through to allow for even browning. Raise the oven temperature to 300 degrees F and continue to bake until golden brown, 20 to 25 minutes.
  4. Pour the cooked oat mixture into a bowl and stir in the raisins, cranberries and coconut. Let cool. The granola will keep in an airtight container at room temperature in a cool dry place for up to 3 weeks.
  5. In four parfait glasses or a large glass bowl, create alternating layers of granola, yogurt and berries, using a total of 2 cups of the granola.

easy, yummy, agree with Kamal H- not to sweet and the perfect crunch! We mix up the dried fruit and nuts for variety. Wonderful with yogurt and fruit for a quick, healthy breakfast!

I made this granola recipe this afternoon after watching Damaris Phillips make it on one of her cooking shows on FoodNetwork TV. It was actually “easy-peasy” for my first attempt of making home-made granola. This granola is soooo good, that I’m not sure I’ll ever add it to yogurt or any parfaits; I’ll just eat it as a snack. I decided to cut the entire recipe in half because I remember thinking while I was watching the show that it might make too much if my family didn’t like it. Glad I did, because I only have ONE large airtight container right now to store the granola. I also adjusted the recipe by ADDING 1/4 cup (would be 1/2 cup for a FULL recipe) of mini semi-sweet chocolate chips to the “cooled” granola (definitely make sure the granola is cooled or the chocolate chips will melt). This is a recipe keeper!

No more store brought granola for me.

I saw a video clip of Damaris Phillips making this recipe and it looked so simple, I went out the next day and got every I needed to make this granola. I did make a few minor alterations. I used gluten free thick rolled oaks, fruit sweetened dry cranberries, black currents, organic raisins, unsweetened coconut chips, unsweetened banana chips broken into small pieces and I used walnuts, pecans, Brazil nuts, hazel nuts, sunflower seeds, cashews and peanuts. I used fewer cups of nuts and more dried fruit than the recipe called for because I omitted the brown sugar. I did use about a cup of honey. I baked it at 250 the whole time total bake time 1 hour and 15 minutes. Came out so good all by its self and super good over my homemade yogurt with homemade blueberry preserves. OMG I know I will be making this often. Couple friends stopped by just as it was cooling and they could not stop eating it. I think this will make a great gift.
