Eggnog Yogurt With Granola

Ingredients

  1. 3 cups rolled oats
  2. 1 cup pistachios
  3. 1/3 cup wheat germ
  4. 2 tablespoons sesame seeds
  5. 1/2 cup pure maple syrup
  6. 1/4 cup packed light brown sugar
  7. 1 teaspoon vanilla extract
  8. 1/2 cup extra-virgin olive oil
  9. 1/2 teaspoon ground cinnamon
  10. 1/4 teaspoon ground cardamom
  11. Kosher salt
  12. 1/2 cup unsweetened coconut flakes
  13. 1/2 cup dried cranberries
  14. 1/2 cup chopped dried apricots
  15. 2 1/2 cups low-fat Greek yogurt
  16. 3/4 cup eggnog
  17. Freshly grated nutmeg
  18. Honey, for drizzling (optional)

Instructions

  1. Make the granola: Preheat the oven to 300 degrees F. Toss the oats, pistachios, wheat germ, sesame seeds, maple syrup, brown sugar, vanilla, olive oil, cinnamon, cardamom and 1 teaspoon salt in a bowl. Spread on a rimmed baking sheet and bake 20 minutes, stirring halfway through. Remove from the oven and stir in the coconut. Return the granola to the oven and bake until golden, 20 to 25 more minutes, stirring halfway through.
  2. Meanwhile, make the yogurt: Whisk the Greek yogurt, eggnog and nutmeg to taste in a bowl until smooth. Cover and chill until ready to serve.
  3. Remove the granola from the oven and stir in the dried cranberries and apricots. Serve warm or at room temperature with the eggnog yogurt; drizzle with honey and sprinkle with nutmeg. Store extra granola in an airtight container in the freezer for up to 2 weeks.

I’ve made this granola on Christmas Day for the past 10 years. Makes the house smell great. Have made it with and without the wheat germ. Have made it with sweetened and unsweetened coconut. Still great either way. Don’t skip the cardamom though!

Absolutely delicious. Didn’t have wheat germ and couldn’t find unsweetened coconut flakes, but tasted wonderful! I also went to buy some Cardamom, and nearly fell over at the price. I used nutmet…just a pinch. The yogurt was wonderful as well.

We really enjoyed the granola. The consistency was good – some bigger “crumbles”, some smaller. It was plenty sweet, but not overpowering. Can’t comment on the yogurt, but the granola was a good way to sneak some fiber into my picky kids’ diets.
