Healthy Air Fryer Baked Pineapple Upside-Down Oatmeal

Feel like you’re having dessert for breakfast with this baked oatmeal — it’s a cross between decadent pineapple upside-down cake and hearty oats. Fresh pineapple and frozen cherries are a healthier take on the usual canned and jarred options, and the air circulation from the air fryer means a faster and more even bake. Be sure to use a baking dish without handles so it can easily fit in the air fryer.

Ingredients

  1. Nonstick cooking spray
  2. 1/2 pineapple, peeled and cored
  3. 1/3 cup packed plus 2 tablespoons dark brown sugar
  4. 4 frozen pitted cherries, thawed, rinsed and drained
  5. 2 3/4 cups old-fashioned oats
  6. 1 1/2 teaspoons baking powder
  7. 3/4 teaspoon kosher salt
  8. 2 cups 2-percent milk or plant-based milk
  9. 2 tablespoons unsalted butter, melted and cooled slightly
  10. 1 1/2 teaspoons pure vanilla extract
  11. 1/4 teaspoon pure almond extract
  12. 2 large eggs

Instructions

  1. Spray an 8-by-8-inch baking dish without handles with nonstick cooking spray.
  2. Slice the pineapple into four 1/4-inch-thick rings and cut the remaining pineapple into small dice. Measure out 1/2 cup diced pineapple and set aside, reserving the rest for another use. Sprinkle 2 tablespoons of the brown sugar over the bottom of the prepared baking dish and arrange the pineapple slices in a square in the dish. Place a cherry in the center of each pineapple ring.
  3. Combine the oats, baking powder and salt in a medium bowl. Whisk together the remaining 1/3 cup brown sugar, milk, melted butter, vanilla extract, almond extract, and eggs in a separate bowl. Pour over the oat mixture and stir to combine. Fold in the chopped pineapple. Spoon the oatmeal mixture over the pineapple rings, spreading to cover. Cook in a 6-quart air fryer at 325 degrees F until puffed and golden brown, 40 to 45 minutes (see Cook’s Note).
  4. Let cool in the baking dish for 5 minutes, then gently loosen the sides with a butter knife and flip the baked oatmeal out onto a cutting board, to reveal the pineapple slices. Let cool for 10 additional minutes before slicing.

This is delicious! Not overly sweet which is perfect for our family. I added 1/2 tsp of cinnamon to the oatmeal mixture then sprinkled a little more on top after turning out to the serving plate. I love using the air fryer in summer to avoid turning on the oven. Will add this to my rotation of oatmeal bakes.
