Goat Cheese Truffles

Ingredients

  1. Two 8-ounce logs goat cheese
  2. 1/4 cup sour cream
  3. 1 teaspoon kosher salt
  4. 1/4 cup minced fresh dill
  5. 1/4 cup toasted sesame seeds
  6. 2 tablespoons chopped walnuts
  7. 2 tablespoons chopped dried cherries
  8. 24 pretzel sticks

Instructions

  1. Line a baking sheet with parchment.
  2. Add the goat cheese, sour cream and salt to the bowl of a food processor and process until smooth, about 30 seconds. Using a tablespoon, scoop out some of the mixture and roll it into a ball to form a truffle. Place on the prepared baking sheet and repeat until you have 24 truffles. Transfer to the freezer to firm up, about 10 minutes.
  3. Put the dill and sesame seeds into separate small bowls. Mix the walnuts and cherries in a third small bowl.
  4. Roll 8 of the cheese balls in the dill, 8 in the sesame seeds and 8 in the walnut and cherry mixture. Transfer the truffles to a serving platter. Insert a pretzel stick into each truffle. If making ahead of time, cover and refrigerate the balls without the pretzel sticks, then insert the sticks right before serving.

Way too salty – added 2 more logs of goat cheese and sour cream and it still didn’t cut the salt.

So easy and tasty. I didn’t like the sesame seed. Next time I’m going to try using everything bagel seasoning instead.

These are really good.  I might try using plain yogurt next time instead of sour cream. Also, this would make a great spread on a cracker or melba toast. You could add a thin slice of cucumber and small sprig of dill.  It is definitely a keeper.

I attempted to make these today.  The flavor was great but I don’t know how you made these into balls.  The batter was so liquid it was impossible to roll. I was really disappointed, ended up piping onto dried apricots.
