Ingredients

  1. 1 large European or seedless hothouse cucumber
  2. 1/2 cup plain yogurt
  3. 2 tablespoons minced fresh mint
  4. 1 clove garlic, minced
  5. Salt and freshly ground pepper

Instructions

  1. Cut the cucumber into thin slices and place them in a medium-sized glass salad bowl. Mix the remaining ingredients together and pour them over the cucumber slices. Cover with plastic wrap and chill for 1 hour. Serve chilled.
