3 Pea Fried Rice

Ingredients

  1. 1 tablespoon minced garlic
  2. 1 tablespoon minced ginger
  3. 4 cups cooked long grain rice, usually day old
  4. 3 eggs scrambled
  5. 2 tablespoons chive batons
  6. 1 cup blanched English peas
  7. Salt and pepper to taste
  8. 1 cup blanched snow peas
  9. 1 cup blanched snap peas
  10. Citrus Vinaigrette (recipe follows)
  11. Juice of 1 lemon
  12. Juice of 1 lime
  13. Juice of 1 orange
  14. 1/4 cup extra virgin olive oil
  15. Salt and black pepper to taste

Instructions

  1. In a wok, coat with canola oil and add garlic and ginger. Cook until soft and add rice. Mix well then add eggs, chives and English peas. Heat thoroughly. Check for seasoning. Toss snow and snap peas with vinaigrette. Check for seasoning.
  2. Mix all ingredients well.
