Cranberry Ginger Spritzer

You can call it a spritzer, but in spirit (and flavor) this drink most resembles a ginger ale. Kids will love the color. For grown-ups, make this drink more festive by adding real bubbly-champagne! At Thanksgiving, swap in Beaujolais Nouveau. If you have some crystallized ginger on hand, add some slivers as garnish to heighten the ginger flavor.

Ingredients

  1. 1 pound whole cranberries
  2. 1 cup sugar
  3. 1/3 cup coarsely chopped fresh ginger, unpeeled (about 3 ounces)
  4. Ice
  5. 2 cups chilled club soda
  6. 1 orange, peeled into strips, for garnish

Instructions

  1. Set aside 2 tablespoons of the cranberries to decorate the drinks. Combine the remaining cranberries, sugar and ginger in a medium pot with 3 cups water. Bring to a simmer over medium-high heat, stirring occasionally, until the sugar is dissolved, about 5 minutes. Continue to simmer until the cranberries have burst open, about 5 minutes more. 
  2. Pour the mixture through a fine strainer, pressing just enough to get the liquid through, and then discard the solids. Refrigerate until chilled, about 30 minutes. (If you want to use your drink sooner, chill the container in an ice bath for about 10 minutes.) 
  3. When cold, add to a large pitcher filled with ice and pour in the club soda. Garnish with orange peel and a few whole berries.
