Fantasy Fudge

Marshmallow creme is what makes this easy fudge so incredibly airy (hint: the recipe is inspired by the popular recipe on the back of the label). Chopped toasted walnuts, or any of your favorite nuts, add welcome crunch. Share the rich, delightful squares with all your friends and family.
Level: Easy
Total: 2 hr 25 min
Active: 25 min
Yield: 16 pieces

Ingredients

  1. 1 cup walnuts
  2. Nonstick cooking spray, for the foil
  3. 1 pound bittersweet chocolate, chopped
  4. One 14-ounce can sweetened condensed milk
  5. One 7.5-ounce jar marshmallow creme
  6. 2 tablespoons unsalted butter, at room temperature

Instructions

  1. Toast the walnuts in a medium saute pan over medium heat, tossing frequently, until darkened and fragrant, about 5 minutes. Transfer to a cutting board to cool, then roughly chop.
  2. Line an 8-inch square cake pan with foil, leaving a 2-inch overhang on 2 sides. Coat lightly with cooking spray.
  3. Combine the chocolate and condensed milk in a large saucepan over medium-low heat. Cook, stirring frequently, until the chocolate is melted and the mixture is thick and smooth, 2 to 3 minutes. Remove from the heat. Add the marshmallow creme and butter and stir until completely combined and no streaks remain. Stir in the walnuts until evenly dispersed.
  4. Transfer the mixture to the prepared cake pan. Smooth with a rubber spatula into an even layer. Refrigerate until firm, 2 to 3 hours.
  5. Use the foil overhang to remove the fudge from the pan. Cut into small squares. The fudge can be refrigerated in an airtight container up to 5 days.

I made this recipe not realizing that it is not really fantasy fudge until I was in the middle of making it. It is really a refrigerator fudge. You don’t bring the ingredients up to sift ball temperature. You only melt the ingredients together. My kids like it but it does not check the box for my holiday fudge craving.

My mother-in-law made fudge this way. I loved the holidays & her bringing us tins of fudge like this. I lost the recipe shortly after she passed & never could make it this good. Thank you for sharing this recipe as it taste just like the fudge she made us.

I am not a fudge fan, however, this was easy to do and very “light”. I would do this again as well as pass this recipe on to others.
