Candy Corn Fudge

The secret to these cute Halloween candies is a quick chill in the fridge between layers so the colors set.

Ingredients

  1. Nonstick cooking spray
  2. 3/4 cup sweetened condensed milk
  3. Three 4-ounce bars good quality white chocolate, finely chopped
  4. Orange and yellow food coloring

Instructions

  1. Line a 6-by-3-by-2 1/2 inch mini loaf pan with foil, being sure to leave a 2-inch overhang on the long sides of the pan. Lightly spray the foil with cooking spray and set aside.
  2. Combine the sweetened condensed milk and chocolate in a bowl and microwave for 1 minute. Using a whisk, stir them together until smooth. Pour half of the mixture into another bowl. Stir 3 to 4 drops of orange food coloring into one of the bowls and set aside. Pour half of the remaining mixture into another bowl and add 2 to 3 drops of yellow food coloring to one of them, stirring until evenly distributed. 
  3. Pour the yellow mixture into the prepared pan. Tap the pan against a flat surface to ensure that it is smooth and even, then chill for 5 minutes. Pour on the orange mixture and spread it into a smooth and even layer. Tap on a flat surface again, and chill 5 minutes more. Top off the fudge with the white mixture, cover with plastic wrap and then chill in the refrigerator until completely set and firm, at least 1 hour and up to overnight. 
  4. Using the foil overhang as handles, remove the fudge from the pan to a cutting board. Cut the fudge lengthwise into 1/2-inch-thick slices, and then into triangles so that they resemble candy corn.

Loved the recipe! They look so cute and my family loved them. I used the whole can of condensed milk, as it helped make sure they didn’t become chunky or dried. I also placed them in the freezer to chill for each layer. Next time I make them I will be chilling them in the freezer overnight to help them stay together better! This time, I chilled them in the fridge overnight but when I went to cut them the next day, it started getting sticky and harder to cut. I don’t think it was chilled enough, so I placed them in the freezer after I cut the triangles, and they are a good consistency now. I recommend chilling in freezer and keeping them there to store until you eat 🙂

Good but my mom’s fudge is better

Well either I failed or this recipe as simple as it is, isn’t fail proof. I followed the directions step by step. Not only is it super soft like fondant but is impossible to cut. It’s been in the refrigerator for 3 hours and is still softer than most fudge. I tried a bit of it and think it’s overly sweet, although my husband loves it so far. I currently have it sitting in the freezer in hopes that it will set more and make it possible to cut.

This didn’t work. When I mixed the condensed milk and white chocolate it became chunky and dried up. I tried everything to fix it but it just didn’t work
