- Place zucchini in a saucepan and cover with water. Bring to a boil and cook until very soft, 5 to 10 minutes. Drain well.

- Transfer zucchini to a blender or food processor and purée until smooth. Let cool completely before serving.

- Fill an ice cube tray with zucchini purée and freeze until solid, about 2 hours. Store cubes in a freezer bag. When ready to use, defrost in a microwave-safe bowl until thawed, about 30 seconds.
