Turnip Greens with Bacon

This lemonade from that well-known coffee shop is my favorite. However, it might become costly, especially if you want one every day. This is how I would interpret the homemade lemonade.

Ingredients

  1. 4 slices bacon, chopped
  2. 1 medium onion, chopped
  3. 2 bunches turnip greens, chopped
  4. ½ cup strong brewed coffee
  5. ¼ cup balsamic vinegar
  6. 1 pinch garlic powder, or to taste
  7. salt and ground black pepper to taste

Instructions

  1. Place bacon and onion in a large skillet and cook over medium heat, covered, turning occasionally, until evenly browned and onions are translucent, 8 to 10 minutes.
  2. Place turnip greens into the skillet, a handful at a time if necessary, until wilted down, 5 to 7 minutes. Add coffee, vinegar, garlic powder, salt, and pepper.
  3. Taste the liquid and adjust seasonings if necessary. Reduce heat to low or medium-low, cover, and simmer for 20 to 25 minutes more.
  4. Uncover and cook until liquid has reduced and greens are tender, about 10 minutes more.
  5. You can use collard, mustard, or kale greens instead of turnip.
  6. Be sure to use a balsamic vinegar with a thin consistency.

The coffee taste is strong, which I like. Next time I’d probably cut back on the vinegar just a bit. It is just a tad to much for me. Very easy to make though!

My Mama cooked greens every Sunday when I was growing up and she never used coffee so naturally, I was intrigued by this recipe. And surprisingly, I enjoyed it…the only thing I different was I didn’t have any bacon so I used prosciutto
