Spicy Daikon Radish

Ingredients

  1. 1 pound daikon radish, peeled
  2. 2 tablespoons extra-virgin olive oil
  3. 1 green chile pepper, chopped, or to taste
  4. 1 pinch white sugar, or to taste
  5. salt to taste

Instructions

  1. Shred radishes; this should yield about 4 cups.
  2. Heat oil in a heavy pan over high heat. Add chile pepper and stir for 30 seconds. Add radishes and stir for 2 to 3 minutes. Cover, turn the heat to low, and cook for 15 minutes, stirring occasionally.
  3. Season with sugar and salt. Turn heat to medium-high and cook, stirring constantly, until dry and radishes have turned golden brown.
