Ingredients
- 1 tablespoon olive oil
- 1 pound fennel, trimmed and thinly sliced
- 1 onion, halved and thinly sliced
- ½ teaspoon fennel seeds
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- 1 apple, cored and sliced with peel
- freshly ground black pepper and fennel fronds
Instructions
- Heat oil in a large skillet over medium-high heat. Add fennel, onion, and fennel seeds. Season with salt and pepper.
- Cook, stirring occasionally, until fennel is just tender and beginning to brown, 8 to 10 minutes. Stir in apple and cook until tender, about 5 minutes. Top with additional black pepper and, if desired, fennel fronds.

A delightful light side dish.
This recipe is missing the type of apple that the chef used, which is a major omission IMO! I tried using a Fuji apple and it was just ok! Next time, I will try using a Granny Smith apple.
