Roasted Turnips

Lean ground turkey is used in place of pork to create this incredibly tasty lighter version of Mexican chorizo. Create taco meat from it, make it into burger patties, or fry some up with eggs! I use this to prepare my recipe for spaghetti squash stuffed with chorizo, which is also available on this website. The options are limitless!

Ingredients

  1. 1 ½ pounds turnips
  2. 2 tablespoons olive oil
  3. ½ teaspoon dried thyme
  4. salt and freshly ground black pepper to taste
  5. chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Peel and trim turnips. Then cut into 1-1/4 inch pieces and place into a bowl. Drizzle with olive oil and season with thyme, salt, and pepper; toss until turnips are well coated. Spread out in 1 layer on a large baking sheet.
  3. Roast for 15 minutes. Turn and roast until fork-tender and lightly browned, 10 to 15 more minutes.
