It’s incredibly simple and straightforward to make this roasted okra recipe. Although okra is delicious stewed, we occasionally prefer to roast ours for a bit of variety. When roasted, okra is less gooey or slimy. A good grower in the South needs okra recipes. When okra is in season, I find myself bringing it in almost every other day. When we have some on hand, chopped tomato makes a fantastic addition.

Ingredients

  1. 18 fresh okra pods, sliced 1/3 inch thick
  2. 1 tablespoon olive oil
  3. 2 teaspoons kosher salt, or to taste
  4. 2 teaspoons black pepper, or to taste

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  2. Arrange okra in a single layer on the prepared baking sheet. Drizzle with olive oil; sprinkle with kosher salt and pepper.
  3. Roast in the preheated oven until okra is lightly browned and tender, 10 to 15 minutes.

This was very good. Baked it in cast iron pan. Used “everything” seasoning rather than other seasonings.

I didn’t put nearly the amount of salt. I sprinkled it with nature’s seasoning and I like it cooked longer so probably 25 minutes to make it crunchy/chewy

I know when cooking any okra, except fried. You need to add a cut up tomato or some white vinegar, to cut the slime Something acid. Like when you smother okra in a cast iron skillet you need to add a tomato or a little white vinegar . I made this and tossed the okra, oil, and a little vinegar in a bowl, before cooking. It was good and crispy..

Wow! Easy-Peasy! I used a bag of pre-chopped, frozen okra. Did not thaw them. Tossed them in a bowl with olive oil, kosher salt, pepper and a sprinkle of pepper flakes. Roasted them for 40 minutes. They were PERFECT!!!! Thank you!

As written, this recipe is 100% inedible! 2 tsp of salt and pepper is WAAAAAAAAAYYYYYY TOO MUCH for 18 okra pods. I’ll try it again with maybe ¼ tsp of each. Terrible waste of a batch of okra. I would have spotted this error had I been the one actually preparing the meal, however, I just sent it to my daughter, a less experienced cook, as something new to try. Should have paid more attention.

Way too much salt. I used a bag of frozen chopped okra that I thawed in running water in a colander. Only used 1 tsp of kosher salt and it was still way too salty. Took a lot longer than the recipe stated. I got tired of waiting after 40 minutes so I took it out. Probably won’t make again.

Being from Oklahoma, I grew up on Fried okra but these days I don’t eat fried foods so I wanted to TRY this recipe to see how I liked it! Turns out I LOVED IT. I did roast it 20 minutes because I wanted it crunchy (like fried). I tossed it in a bowl with EVOO and the salt and pepper first and the. Put it on a foil lined cookie sheet. YUM! I’ll go back for MORE okra before the season is over!

This roasted okra was wonderful! I enjoy okra any way, in gumbo, sautéed with tomatoes, fried! I purchased some fresh okra from the farmers market over the weekend and oven roasted it per the recipe. I did cut the pods lengthwise. The flavor was terrific.
