Prosciutto-Wrapped Asparagus

Ingredients

  1. 1 tablespoon olive oil, or as needed
  2. ¼ teaspoon red pepper flakes
  3. 12 spears asparagus, trimmed
  4. 6 slices prosciutto
  5. salt and ground black pepper to taste
  6. 1 tablespoon balsamic vinegar, or to taste

Instructions

  1. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
  2. Combine olive oil and red pepper flakes. Place asparagus on a baking sheet and drizzle olive oil mixture over top; mix together with your hands to coat.
  3. Cut each slice of prosciutto in half lengthwise. Wrap a strip of prosciutto around each asparagus spear, angling as you wrap to cover most of the asparagus. Arrange on the baking sheet and season with salt and pepper.
  4. Broil in the preheated oven until prosciutto is sizzling and crispy and asparagus is tender, 5 to 7 minutes.
  5. Transfer asparagus to a serving platter. Drizzle with balsamic vinegar and serve immediately.
  6. Red pepper flakes and balsamic vinegar are optional.

We really enjoyed this as a side to our meal (Dreamy Chicken Francese from this site)! My asparagus was on the skinnier side so I used three asparagus per prosciutto. The prosciutto is very delicate and tore easily when cutting in half lengthwise or when wrapping around but worth it! Using a silicon brush, brushed each bundle with the olive oil. Repeated using the same brush when they came out of the oven for the balsamic. The cook time was spot on (7 min) and they looked so beautiful and tasted even better! Didn’t do this but could see fresh grated Parmesan sprinkled over all all and returned to the oven for one more min but? Not needed – and only a maybe idea for next next time. As is, delicious! Felt like we were celebrating something special as we ate dinner tonight! Thank you for posting this!
