Ingredients
- 2 teaspoons kosher salt
- 1 medium eggplant
- 2 teaspoons Italian seasoning
- 1 cup pizza sauce
- 2 cups shredded low-moisture mozzarella cheese
- 15 slices turkey pepperoni, or to taste
- 2 tablespoons sliced black olives, or to taste
Instructions
- Slice ends off eggplant and cut into 3/4-inch rounds. Place on a baking sheet and sprinkle liberally on both sides with salt. Let sweat until most of the moisture seeps out, about 20 minutes.
- Preheat the oven to 400 degrees F (200 degrees C).
- Rinse eggplant completely, then pat dry. Return to the baking sheet and sprinkle with Italian seasoning.
- Bake in the preheated oven for 15 minutes. Remove from the oven and top each slice with pizza sauce, cheese, pepperoni, and olives. Return to the oven and bake just until cheese is melted and sauce is heated through, about 5 minutes.

Really good! As written, I give this 4 stars, but easily 5 stars with a few tweaks. I got 12 slices out of a medium eggplant, so a hearty 4-slice serving per person. I found the eggplant slices a bit bland, so next time I’ll just pat them dry (instead of rinsing all the salt off), which will help with flavor. Even though I was generous with the pizza sauce, 1 cup was too much. I also ended up doubling the olives and pepperoni because the stated amounts weren’t nearly enough to cover 12 slices. There is plenty of cheese, so you might not even use it all. The cook time was spot on. Such a great pizza alternative that I’ll definitely make again!
