Not all fruit salads need to be sweet! This savory take on fruit salad packs an umami punch from the fish sauce while maintaining a refreshing and herbaceous quality from the lime juice, cilantro and mint.

Ingredients
- 1 Thai chile pepper, thinly sliced
- 1/4 cup lime juice (from 2 to 3 limes)
- 1 tablespoon fish sauce
- 1 1/2 teaspoons sugar
- 1/2 papaya, cut into 3/4- to 1-inch cubes (about 3 cups)
- 2 to 3 mangoes, cut into 3/4- to 1-inch cubes (about 3 cups)
- 1 1/2 cups green grapes, halved
- 1 cup chopped fresh cilantro
- 1 cup chopped fresh mint
Instructions
- Combine the chile pepper, lime juice, fish sauce and sugar in a large bowl and whisk until the sugar has dissolved. Add the papaya, mangoes and grapes, tossing to coat. Let sit, tossing occasionally, until the fruit has softened slightly and is juicy, about 30 minutes.
- Add 3/4 cup each of the cilantro and mint and toss. Transfer to a serving platter or bowl and top with the remaining herbs.

this salad was fantastic. I added an extra hot pepper. the combination of the mint, cilantro, fish sauce and lime juice is refreshing. I also added this to oatmeal -topped- and it was very good.
