A refreshing salad when watermelon is at its peak, to me, this is the epitome of summertime. My marinated watermelon salad is bursting with bold flavors that all coexist so perfectly together. Fresh and juicy watermelon is paired with tangy balsamic, sharp red onion and sweet basil to hit all those notes. Rounded out with creamy burrata, this salad has it all.

Ingredients
- 1/2 cup extra-virgin olive oil
- 1/4 cup white balsamic vinegar
- 1 tablespoon honey
- 2 teaspoons kosher salt
- 1 teaspoon freshly cracked black pepper
- 6 cups 1-inch cubes watermelon
- 1/2 red onion, sliced thin
- Two 8-ounce balls burrata
- 1/4 cup fresh basil, torn
- Balsamic glaze (store-bought), optional, for drizzling
Instructions
- In a large bowl, whisk together the olive oil, balsamic vinegar, honey, salt and pepper until the dressing has formed. Gently toss into the same bowl the watermelon and red onion, making sure everything is fully coated in the dressing. Transfer the watermelon salad to a platter and top with the torn pieces of burrata and basil. Drizzle with the balsamic glaze, if using.

A hit! My local grocery didn’t have burrata in stock so I cut up mozzarella into small bite sized pieces. Love it & so great to eat during our current heatwave.
Watermelon, balsamic glaze and basil are a match made in heaven! Very easy recipe and would be a great side dish to a bbq and different too. I used mini fresh mozzarella balls on hand so I used that instead of the burrata.
Kardea, if you read this please let Food Network know their search engine for recipes sucks! I searched watermelon and burrata salad and didn’t get any hits! Also searched, watermelon caprese, watermelon mozzarella. Nope. Finally tried Juneteenth watermelon salad and got it. It should not be this hard! I think I’ll be trying your chicken, andouille gumbo from tthe same show, hopefully I can find the recipe!
