Ingredients
- 1/2 cup plus 1 tablespoon whole milk, at room temperature
- 1 tablespoon plus 3/4 teaspoon vanilla extract, at room temperature
- 1 1/2 tablespoons freshly squeezed lemon juice, at room temperature
- 1/2 teaspoon finely grated lemon zest
- 1 1/2 pounds unsalted butter, at room temperature
- 4 1/2 cups confectioner’s sugar
Instructions
- In a small bowl, whisk together the milk, vanilla, lemon juice, and zest.
- In a standing mixer fitted with the paddle attachment, or with a hand-held electric mixer and a bowl, combine the butter and sugar and mix on low until incorporated. Raise the speed to high and mix until light and fluffy, about 10 minutes. (Occasionally turn the mixer off, and scrape the sides of the bowl down with a rubber spatula.)
- Reduce the speed of the mixer to low. Add the milk mixture in 3 batches, waiting for each batch to be fully incorporated before adding the next (scrape the bowl down occasionally). Raise the speed to high and mix briefly until fluffy. Use as desired. May be stored, covered, in the refrigerator for 3 days.

Good and easy to make. I cut the recipe in half and it made more than enough frosting for 24 cupcakes. I bought a back up can of frosting because of the mixed reviews this recipe has, but definitely didn’t need it. If you follow the directions and measure exactly you should have no problem.
Fantastic! Best Vanilla frosting I’ve ever made. I get asked for the recipe everytime I make it. And the way it just magically becomes fluffy at the end is really cool. I don’t know why everyone seems to have problems with it…
This is more like a glaze NOT frosting and even reducing the ingredients to 1 cup of conf. sugar its still a little too sweet.
I reduced the butter to about 1/2 and the frosting was delicious. I agree with torri.murphy, it is very important to beat the butter and sugar for the full 10 minutes. I will definitely make this frosting again.
This worked just fine for me. I don’t know why the others did not get it either. But the lemon zest and juice gives it a little kick there. I did not follow the exact amount but you can play with it until you get the consistency that you want.It was yum!
This was a great “go to” frosting recipe! Don’t know why others didn’t get it right…you have to beat it, as the recipe says, for approximately 10 minutes. Mine was creamy, buttery and had a wonderful consistency…I even messed up partially by not “following” (in order) of ingredients. I will love to make this one again!
The frosting was horrible! It was all liquidy and it just tasted like butter!I followed all the directions. but now i have wasted vanilla, powered sugar and butter!
I really did not like this recipe very much. The steps were a bit much for just a simple buttercream recipe and it did not turn out as I expected. It was very thin and somewhat runny…not thick and rich like a buttercream should be. I ended up not even using it for my cake…big disappointment!
I found this recipe difficult to execute. It was hard for me to gage whether each direction was approriatly reached and the end result did not turn out as I hoped it would. I would not reccomend this recipe to beginer bakers.
While I agree that less butter can be used, this is a great frosting. It is imperative for the butter to be at room temperature and you must beat for the full 10 minutes. The more you beat, the lighter the frosting becomes. I’ve used it on birthday cupcakes for my daughter and nephews over the past 3 years. Those cupcakes are licked clean everytime!
