Swedish Orange Gingersnaps

Ingredients

  1. 1 1/2 sticks unsalted butter
  2. 1 cup brown sugar
  3. 1 large egg
  4. 2 tablespoons plus 1 teaspoon molasses
  5. 1 tablespoon orange juice
  6. 1 tablespoon finely grated orange zest
  7. 2 3/4 to 3 cups flour
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon ground cloves
  10. 2 teaspoons ground cinnamon
  11. 2 teaspoons ground ginger

Instructions

  1. In a mixing bowl or standing mixer cream together the butter and sugar until light. Beat in 1 egg and mix in the molasses, orange juice, and zest. Sift together the dry ingredients and stir them into the wet ingredients to make a soft, smooth dough, adding more flour if dough is too sticky. Knead the dough three times on a lightly floured board.
  2. Shape the dough into 3 logs, about 8-inches long, wrap in plastic wrap and refrigerate at least 1 hour or overnight.
  3. Preheat oven to 350 degrees F. Slice logs into thin circles, less than 1/8-inch thick. Place on lightly greased baking sheets.
  4. Bake cookies for about 8 to 10 minutes. Remove from oven and transfer cookies to a rack to cool.

I would gave given this recipe 5 stars BUT, the math is wrong with how many cookies you get from this. If you cut the logs into less than 1/8th of an inch and you have 3 logs at approximately 8″ long you’ll end up with 192 cookies, not 60. As a professional baker, this is something that you should see right away.
The cookies are awesome. Next time I’m going to add more ginger to get them spicer.
As they cool they get better with flavor. This is a keeper!

I made these and they were not good. I gave it 3 stars instead of 1 star because I ended up using them instead of graham crackers (I did not want to throw them out when I made a coconut cheesecake.. the crust was awesome.

These cookies did not taste very good. I had made them for a Christmas basket, but my husband, daughter and I thought they tasted awful…so I ended up not using them after I made them.

I found these cookies very quick and easy to make and they taste great! I added more orange though to make them even more citrusy

This is easy to make. You can mix the dough ahead of time then bake whenever. They are delicious without any frosting or glaze.
